what’s the story morning glory muffins?

What happens when you take a bunch of CSA produce and put it into a batch of muffins? Pure muffin bliss, that’s what.

Morning Glory Muffins
Adapted from the Vegetarian Times Magazine January/February 2011 issue

Preheat oven to 350°F and prepare muffin tins by spraying them with an olive oil mist or your preferred cooking spray. In a medium sized bowl whisk together:

  • 2 cups all-purpose flour
  • 2 tsp. ground cinnamon
  • 2 tsp. ground ginger
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt

Then mix these ingredients in a measuring pitcher:

  • 2/3 cup packed light brown sugar
  • 1/2 cup canola oil
  • 1/2 cup fresh chopped fruit (CSA peaches or apples are yummy!)
  • 1-1/4 cups orange juice
  • 1 tsp. vanilla extract

Combine the sugar-oil-fruit mixture with the flour mixture in the bowl. Fold in:

  • 1-1/2 cups finely grated carrots (from the CSA box of course!)
  • 1/2 cup raisins
  • 1/2 cup chopped nuts, optional

Spoon batter into the muffin pans and bake for 18-22 minutes until the muffins are golden brown and you can insert a toothpick into the center and it returns clean. Cool and enjoy!
