Taking Stock: Dark Days of Winter

It occurred to me that I should do a jar-count before going into Thanksgiving and the Dark Days Challenge that starts November 27th. I have given away dozens of food-in-jars gifts – shipped jars to my parents in the Rockies, jars for my favorite farmers, gifts to friends & family, heck I’ve even taken a jar of my coveted chocolate sauce down to the local hardware store. Plus we’ve been living like royalty with a what kind of jam shall we have for breakfast today? attitude for months now. 🙂

Canning has been both a therapeutic escape during stressful weeks, as well as a fun excuse to get together with my canning friends (Amy S, Tom, Rebecca, Mira) all summer long. I can’t wait to see some of them at our Thanksgiving potluck come next Saturday.

Without further adieu, here’s the full list for the very first time in public… (please don’t raid my house when the zombies come!!)

Canned foods presently under my roof:

Butters & Sauces –
Delicious spooned over hot cereals and ice creams!

  • Mango Cardamom Butter, 6/21/11 – 1 4oz jar, 2 half pints, 3 pints
  • Spiced Peach Butter, 7/7/11 – 4 half pints
  • Red Raspberry Chocolate Sauce, 8/4/11 – 6 4oz jars
  • Black Raspberry Chocolate Sauce, 8/4/11 – 4 4oz jars
  • Peach Chutney, 8/11/11 – 8 half pints
  • Tomato Butter, 8/25/11 – 3 pints
  • Apples in Light Syrup (for baking), 10/11/11 – 1 pint, 2 quarts
  • Applesauce, 10/30/11 – 3 pints
  • Salted Caramel Apple Pear Butter, 11/13/11 – 2 pints

Chutneys –
Perfect accompaniments to Indian dishes, vegetable stir-fry, cheese platters

  • Peach Chutney, 7/7/11 – 2 half pints
  • Green Mango Chutney, 10/31/11 – 2 pints

Condiments –
I can only imagine how many more jars of salsa we would have if hurricane Irene hadn’t wiped out the paste tomatoes on the North Shore!

One hasn’t lived until she’s tried a heaping spoonful of conserve over oven-warmed brie 🙂

Syrups
Syrups can be versatile – we’ve used them in cocktails, on pancakes and waffles, and in Italian sodas (seltzer + syrup = yum)

Vegetables –
I wish there were more boiling water bath methods for vegetable canning than I’ve found. Hoping to learn the pressure canning method in the near future.

    • Ooo, I haven’t decided the holiday giftable jars yet either! I can’t wait to see your list – your canning updates have sounded sooo good!

      Shipping went really well. I repurposed several of the ranch csa boxes, reuse right? 🙂
