Dark Days Meal #3: Nella Pasta’s Fresh Corn, Caramelized Onion & Thyme Ravioli

Nella Pasta had their wares available at the Somerville Winter Farmers Market and that became our meal #3 for the Dark Days of Winter Challenge. I greedily snapped up the last box of the corn ravioli and was so glad I did!

There’s nothing like sweet corn to scream “Summer’s here!” in Massachusetts. We see it served on the cob at clambakes and cookouts, cut into kernels and cooked into chowders and gumbos, but have you tried it in ravioli? We take this ultra-sweet veggie and slice it raw right off the cob, and promptly sauté it with caramelized onions and thyme to add a crisp, summer bite to deliciously cheesy ravioli. About thyme you tried it (corn-y we know).

I boiled the ravioli in salted water and served them with a salad of greens from our indoor garden and some of Shaw Farm’s sweet butter. Delish!
